“Sankakuyama Goemon” is a famous Udon noodle shop in Sapporo that launched successfully into the ramen business on their opening. The homemade noodles are a specialty for this ramen shop. The straight medium-thin noodles are created with the technical know-how of Udon noodle-making and charms many fans with its elasticity and plenty of body. The light soup is mainly based on chicken stock accompanied by the flavours of pork bones and small dried sardines. The toppings are simple as well, including thin strips of Kyoto Kujo Negi (spring onions), menma (pickled bamboo shoots) and chashu (roast pork). This ramen shop specialises only in shoyu (soy sauce) ramen.
